Arugula-Spinach Scrambled Eggs

A healthy breakfast is so important for me. With my job as a nanny I really need all the energy i can get so I always opt in for a healthy breakfast every morning. When I’m not in the mood to whip up some oatmeal I opt into making some scrambled eggs with arugula. This breakfast is just so yum and I can whip it up in less than 15 mins. Today, I want to share with you all my favorite breakfast food Arugula-Spinach scrambled eggs. It’s so easy to make trust me.Arugula-Spinach Scrambled Eggs

  • Ingredients
    • 2 Brown Eggs
    • 1 cup of Dole Arugula or Spinach
    • I tsp of Olive Oil
    • A Sprinkle of Ground Black Pepper 
    • A Sprinkle of Sea Salt
  • Let’s get cooking
    • In a bowl crack two eggs. First, proceed to measure a cup of arugula or if you don’t have arugula using spinach is fine. Second, add the arugula or spinach to the bowl of eggs. , use a whisk or large fork to mix the arugula and eggs together. Third, in a medium skillet add 1 tsp of olive oil and when heated add the arugula and egg mix. Fourth, using a wooden spatula proceed to scrambling the eggs. Before the eggs are completely cooked add a sprinkle of ground black pepper and sea salt. Turn off the stove and voilà you have scrambled eggs. P.S. if you know how to scramble eggs you can do your own things. Lastly, i love dashing tabasco sauce on my eggs to just spice it up a little bit. I also enjoy a cup of lemon-ginger tea or just a glass of  water and a vanilla yogurt on the side. Enjoy xoxo ♥
