Tilapia Mango Salsa Salad with a Limey Ranch Avocado DipHey guys, guess what I have a brand new recipe for you. I swear, lately, my blog has been slowly transitioning into a food blog because I’ve been sharing so many yummy recipes. I was recently contacted by GoAvo to work with them on a collaboration, where I had to create a dish using one of GoAvo’s avocado spreads. At first I was so nervous about this collaboration because honestly, I’m not a chef and when I cook I literally throw ingredients together and somehow it manages to taste good. Also, I have to confess that some days I just hate cooking and the thought of being in the kitchen just makes me want to scream lol. But after thinking it over I snatched my non-existent weave, (LOL) gave myself a little pep talk and I realized that this would be a fun, creative and yummy experience.  So please enjoy my tilapia mango salsa salad with a ranch avocado dip and chips on the side. Ingredients
  1. Tilapia (1)
  2. Lettuce
  3. Can Corn (1)
  4. Mango Salsa (store made)
  5. Limes (1)
  6. Lemons (2)
  7. Cilantro
  8. Tostitos Scoops
  9. Dairy Free Ranch Dressing
  10. Pepper Flakes
  11. GoAvo Avocado Spread
Prepare The Ranch Avocado Dip (5mins)
  1. In a bowl, combine the juice of one lime, 1 tbsp. of ranch dressing and 2 tbsp. of GoAvo spread.
  2. Mix the contents of the bowl thoroughly
  3. Garnish with red pepper flakes and cilantro. Refrigerate until ready to eat.
Prepare the tilapia
  1. First, I love to use the juices of the two lemons and 1 cup of water to soak the tilapia in a lemon bath. This process simply removes that fishy smell Tilapia has. Leave in lemon bath for approximately 10mins. (This step can be done while you’re making the avocado dip and preparing other ingredients for the salad.
  2. Take the tilapia out of the lemon bath, rinse it, pat it dry then season with salt and pepper
  3. In a medium sized pan, heat 1 tbsp. of olive oil and sear the tilapia. Each side takes 4mins to cook, so make sure to set a timer.
  4. Once the tilapia is cooked, transfer it to a cutting board and cut the tilapia into small bite size pieces.
Now it’s time to make your salad
  1. In a bowl, combine your lettuce, corn, mango salsa and tilapia
  2. Garnish your salad with your favorite salad dressing and dig in. Happy Eating.

  1. The Mango Salsa I bought at Stop & Shop is loaded with so many yummy, fresh ingredients. It has mangos, red peppers, red onions, ginger and cilantro. It has an explosion of flavors that gives the salad a very yummy taste.

My Overall Impression

  • My favorite GoAvo spread was the original and basil flavored spread. I didn’t really like the taste of Chipotle spread though.
  • Since, I received them a couple of weeks ago, I’ve been alternating between the original & basil flavored spread and eating it with either chips or on toast with eggs and salsa. So yummy
  • The one thing I loved about these spreads is that you can definitely tweak it to make it your own and put a funky twist on it. 
  • I love spicy food and discovered when garnished with red pepper flakes it is AWESOME
  • I also love that the GoAvo spread is dairy free, so it’s the perfect alternative to Mayonnaise.

    Never heard of this product before and like you, I do not like Chipotle. My son and hubby do though! I would probably make this recipe with another dressing as I am not fond of Ranch either. Maybe I will mix it with a coleslaw dressing and see how that tastes!
