I have a love/hate relationship with cooking. There are days when I love being in the kitchen whipping up my favorite recipe and then there are days when I’m too tired and lazy to even look at the stove. However, these days I’ve been wanting to cook something new or bake something fun. Cooking is so much fun when you’re actually making something you love. Like last week, I made these Steak Quesadillas and they were so good. I originally got the recipe from Blue Apron and added steak to spice it up a bit. It’s one of those fun, short and easy recipes that won’t take up too much of your time in the kitchen and the clean up is super easy after. I just love when a recipe is super easy and short lol. I just don’t have the patience for long recipes lol. Hahaha I know i have issues! GF Flourless Peanut Butter, Banana and Chocolate Chip Blender Muffins
These muffins are just so yummy. I’ve made them about 4x since I got the recipe a couple months ago and they are just divine. This recipe is so simple and it’s the easiest and shortest recipe. It’s gluten free, dairy free, nut free and has no refined sugars whatsoever in this recipe. It’s healthy and the little ones will love it. All you need is one ripe banana, 1/2 cup of organic peanut butter (I use the peanut butter from whole foods that all vegan and gluten free), 1 egg, 3 tbsp honey, 1/4 tsp. of baking soda, pinch of salt, 1 tbsp of vanilla extract and 1/2 cup of chocolate chips ( I use the brand Enjoy Life because its dairy free). These are seriously so good and bake in just 9 mins. I’m linking the original recipe below and you guys have to try it and let me know what you think.
Mango Carrot Smoothie
Mangos are one of my favorite fruits and I love to have them for breakfast either by itself, in a smoothie or in my oatmeal. Living in Florida mangos are abundant when its in season. This summer I had my belly full of mangos. I have to confess i overdid it a bit and often went to bed mango wasted lol! The mangoes were given to me by my sister Vanessa and my niece mother in law and I welcomed them all with open hands. Mangos are my favorite fruit and that why when i found this easy mango carrot smoothie I just had to try this yummy yummy smoothie. Again, this recipe has only a couple ingredients and its very easy to make. All you need is 1 1/2 cup of fresh orange juice, 1 banana, 1 cup of fresh mangoes, 1 cup of carrots. This recipe Culinary Hill is so good and you definitely need to try it out. It’s a perfect breakfast smoothie.
Apple Cider Donuts
I have been craving Apple Cider Donuts since Fall started and I’ve been seeing everyone going apple picking back home in Connecticut and indulging in some yummy Apple Cider Donuts. I’m seriously so jealous and really considering buying the ingredients to make my own even though I suck at baking lol. I just want Apple Cider Donuts and no where near me has them. Thank God for Pinterest though. They have a variety of different recipes to try and this one below is my favorite from Taste and Tell.
