So Yum Chicken Parm

Over the weekend I had some free time so I decided to look up some quick meals I could whip up for the kids I watch at my nanny job. Since Alexa loves anything Pasta I decided to look up a Chicken Parm recipe on Youtube and I found the perfect Youtube channel croutoncrackerjacks and decided to replicate his recipe. This was my first time making Chicken Parm and I have to say this recipe is actually pretty easy and it came out tasting pretty amazing so i just had to share it with you guys.


Here are some pictures of me preparing the chicken parm. Sadly I forgot to take a picture of what it looked like in the baking pan and after I baked it because I was so excited to eat it 🙁

Recipe Find: Mango and Pineapple Green Smoothie Bowl

This morning while browsing Tumblr I tumbled across this amazing little breakfast recipe/idea. I am lover of smoothies especially green smoothies and when I found this recipe this morning I was o man I just have to try this recipe. It’s looks so yummy and o so healthy too minus the peanut butter (don’t like it).  I love sharing my recipe finds with you guys and thought this one would be perfect for me to try and also all you guys out there. Smoothie Breakfast Bowl


1 cup almond milk

2 cups organic spinach

1/2 cup frozen mango chunks

1/2 cup frozen pineapple chunks

1 tablespoon peanut butter


Put into your high speed blender the almond milk and spinach and blend well. Then add in the remaining ingredients and blend well until completely blended smooth.

It’s so creamy delicious. I love using spinach because it blends so well, you will hardly notice you have 2 cups of spinach in your smoothie.

Top it off with your favorite toppings such as hemp seeds, raw cacao nibs, granola or your favorite berries.

Recipe of the Day: Creamy Pasta, Sausage and Tomato Skillet

I love trying out recipes all the time and last night I decided to cook Creamy Pasta because I was so just so hungry and didn’t feel like ordering food or even going out to buy food. I found this little gem of a recipe on an amazing Chefs website called “Divas Can Cook”. When I’m in the mood too cook (which is not often) I love making pasta dishes or curry and last night was a pasta night since I already had curry earlier in the week. Since I tried this recipe multiple times I didn’t really have to consult with the original recipe for guidelines because it’s a really easy, fast and simple dish to cook. I think it is a perfect dish for like young people and people who are constantly on the go single or married. I just love making creamy pasta and that’s why I picked today to share with you one of my favorite dishes from Divas Can Cook.


Creamy Pasta, Sausage and Tomato Skillet Recipe and Video



2 ½  cup mini bow-tie pasta, uncooked

1 tablespoon olive oil

8 oz smoked turkey dinner sausage, diced

½ cup onions, diced

1 clove garlic, minced

dash of red pepper flakes

2 diced tomatoes (about 1 1/2 cups)

1 cup heavy whipping cream

⅔ cup Italian cheese blend (can also use mozzarella)

1 tablespoon parsley flakes, plus more for garnish

salt & pepper, if desired


1.) Cook pasta in boiling water until al dente. About 6-7 minutes.

2.) Drain pasta and set aside.

3.) Heat olive oil over medium heat.

4.) Add sausage and cook until browned.

5.) Add onion and garlic. Cook until onions are tender.

6.) Add red pepper flakes.

7.) Stir in tomatoes and heavy cream

8.) Bring to a simmer. Simmer for 2-3 minutes until sauce thickens.

9.) Stir in cooked pasta.

10.) Stir in cheese

11.) Stir in parsley

12.) Taste and add salt and pepper if desired.

Recipe of the Day:Clean Eating Coleslaw

Everyone I know is doing this clean eating lifestyle and I am so impressed by the results that one of my goals this year is to try at least a couple recipes this year and once I get my own place to fully change the way I eat. Today’s recipe is a fun recipe that you can bring to a fun night in with your friends during this cold winter season. So hope you enjoy and please visit for more fun, healthy and exciting recipes.

1 small head of cabbage, thinly sliced (About 10 cups)
1/3 cup chopped scallions
2 grated carrots
1 clove of garlic, minced
2 tbsp apple cider vinegar
½ cup of plain fat free Greek yogurt
2 tsp Dijon mustard
1 tsp sugar
Salt and pepper to tatse
In a large bowl combine cabbage, scallions, and carrots.

In a separate smaller bowl, mix together the garlic, vinegar, yogurt, mustard and sugar.

Toss dressing over the cabbage mixture and combine well. Season with salt and pepper and enjoy.

Makes 8 – 3/4cup servings.

Friday Night Cooking!

So last night I decided to make my all time favorite dish curry goat. I just love all things curry but this is one of my favorite Indian dishes. I first had this dish when I was living in Trinidad and let me tell you a girl didn’t have enough since then I’ve learned how to make Curry Goat and I’ve added my own little sassiness to it and called it my favorite dish.

So here is my recipe for curry goat.


  • Goat Meat (I use about 3 pounds and it feed a family of four with leftover for the next day)
  • Curry Powder
  • Onions
  • Chive
  • Adobo Seasoning
  • Olive Oil
  • Coconut Milk
  • Garlic
  • Ginger
  • Ajicito Peppers
  • Culantro
  • Limes
  • Tomatoes

All the ingredients above I got at my local Caribbean store except the Olive Oil. So first thing I did was cut up the meat into smaller pieces (they come pre cut but the pieces were to big so I decided to cut them into smaller pieces). I then washed the meat out with cold water and squeezed three limes on the meat and left it there to soak for 5 mins. I then washed out the lime juice out of the meat and drained out all the water. I use limes to just take out the smell raw meat has. After I chopped up my green ingredients the cilantro, parsley, chives and onions. I then sprinkled adobo, ground garlic and ginger, some paprika and a little bit of Mr. Dash. After I did that I added some curry powder ( I don’t use an exact measurement I just use my discretion but if you want you can add one and a half cups of curry powder. I then use my hands and mix up all the ingredients in the meat.

Time to Cook the Meat!!!!

This is probably the most time consuming thing to cook. It takes a long time to cook so make sure that your afternoon is free because it takes a while to cook. Last night it took me almost 2 hours to cook this meat. On good days it will only take an hour but I guess it was just the meat that was just taking long to get soft.

I first add the olive oil to the hot pot then throw in my pepper, garlic, cilantro, onion and tomatoes and let it simmer in the oil. Next I add the curry powder and just mix it all together. Be careful not to leave the curry in the pot unattended because it will burn. After I mix it in I throw in the can of coconut milk and add more adobo seasoning. I stir the pot and cover it until the coconut milk comes to a bowl. Then I throw in the goat meat. From this step on all you have to do is continue to stir the pot and just keep adding in water or if you want you can add water diluted coconut milk to just keep the coconut flavor. I love adding coconut when I’m making curry it really brings out the flavor. This dish is best served with white  rice. I am so obsessed with coconut milk that I bowl my rice with a little coconut milk. Hope you guys enjoy this dish.
