The holiday season is one of the happiest time. It’s a time that we focus on the light in our lives. It’s a time that we never really think about loss. We never think about things falling apart. It’s a time of bliss. Losing someone during the holiday season has to be one of the most traumatic experiences. It literally hits you harder because you’re really not expecting it. With all the tragedy going in the world I just wanted to say a small prayer for anyone who has recently loss someone or anyone who has been personally affected the recent events going on. In the midst of pain there is always hope, joy and a promise that one day everything will be okay.
It’s officially the most wonderful time of the year. I absolutely love all things Christmas from the food to the Hallmark Channel original Christmas movie, spending time with my love ones and also shopping for the perfect Christmas present. Christmas is one of my favorite times of the year. This year I’ll be fortunate again to spend it with my family in Florida again so before I leave I have a lot of shopping to do. However, as usual I’m always stumped on what to buy everyone on my list. I have a silly confession, I’m someone who loves to shower people with gifts but when the time comes to actually buy the gift I never know what to buy lol. Fortunately, this year I’m prepared. Slow Down, Breathe, Take A Second and Then Start Again.
Today is December 6th and its officially 19 days until Christmas. For some this is a very stressful time, whether your shopping for gifts or just trying to make sure all your holiday prep is finished in time. My advice is to take everything one step at a time. During stressful situation, I always just stop to take a breather.What I’ve noticed is that if I have a lot to do, the one thing that helps is making a list and planning. Never go into any situation without prior planning. Knowing what you have to do and making plans helps alleviate a lot of stress. Also, never think you can do it all by yourself, it never hurts to ask for help. Lastly, don’t forget to take time for yourself. it is the best stress reliever.
Tomorrow December 1st, I officially start my 31 days of inspirational sayings and quotes. I am so excited to do this and can’t wait to share with you what I have been creating. I wanted this to be as personal as possible, so I went out to staples and target and got some cute little stuff to decorate each inspirational quote that will be handwritten. I decided to do this for December because for many this is a time when a lot of people need a pick me up. The holidays can be very stressful,also it can be a time when people do a lot of self reflection and it can be a time when people are just really hard on themselves. I just wanted to create something from my heart for you guys. These 31 days of inspirational quotes and sayings are a part of me that I want to share with you. I really hope you guys love these and share these with your friends and family. I can’t wait to start posting tomorrow so be on the lookout for Day 1 of my inspirational sayings/quotes.
Today I decided to try out Starbucks Eggnog Latte and it was so delicious but since I’m my stomach and dairy are in a disagreement drinking this was such a risk but I just had to. After drinking it and enjoying it I might add I realized two things that the Starbucks Eggnog Latte isn’t for me and I need to find a nondairy alternative. Thank God for recipes like this and also this amazing company called So Delicious (review coming soon once I try their eggnog) that I won’t have to worry about my stomach being in nuts if I drink eggnog this holiday season.
Healthy Pursuit’s Recipe for Dairy-Free Eggnog
- My Mom taught me to separate the whites from yolks using this method. By far the easiest way!
- Place egg yolks in a small mixing bowl and set aside
- Combine remaining ingredients in a medium sized saucepan and bring to a simmer on medium heat.
- Reduce heat to low.
- Slowly add approximately ¼ cup of the hot liquids to the egg yolks while whisking continuously. Continue until you’ve added about one cup of the liquid mixture to the egg yolks before transferring the yolks to the pot.
- Bring back up to medium heat and whisk while simmering for 4 minutes.
- Remove from heat and serve immediately or pour in a mason jar and refrigerate.
- Best sprinkled with a touch of ground cinnamon and nutmeg!
Also, to lower the fat content in this drink, use lite coconut milk as opposed to full-fat.
If you plan on drinking the eggnog right away, opt for less nutmeg (1/2 tsp is best). If you’re planning on letting it sit for 1-2 days before enjoying, go with 1 teaspoon. I found that the longer it sat, the more the flavor developed instead of hitting you with a strong punch of nutmeg!
